Since you seems to be genuinely interested in embalming, may I suggest attending mortuary school instead of getting random "facts" off the internet? I don't know where you are but here in the US it's a 2 years associate degree.
It's something I might consider one day.

I've seen a few photos of people in their caskets who died from car accidents and gunshot wounds, and they always have a bit of asymmetry to them.

Are you saying that if there was a reconstruction and it was great, you wouldn't even be able to tell? There wouldn't be an asymmetry or the mouth looking kind of off as if the deceased had a stroke?

Almost everyone is asymmetrical though. I can't remember the specific percentages, but I'm pretty sure more people are asymmetrical than symmetrical.

I think it's incredible what work can be accomplished on some people. It truly is amazing and most times, the general public (even family) have no clue what type of reconstruction has taken place.

I know some people that will look to see if they can find the injuries. I admit, I look without gawking because I'm interested in the artistry (okay, I've got a morbid side to me too).

I've seen a kid that was mauled to death by dogs. Half his face was gone. I remember seeing part of a nare and his top lip was hanging off.

You would have never guessed it at the viewing. He looked perfect.
That must have been such comfort to the family. I know some people are critical of having the last image of the deceased being them in a casket, but in this case it's so much better than it being of the child horrifically mauled by dogs.

I mean a very distinct asymmetry, not the kind you would usually ever find on someone living.

I have quite a few photo sets of people who died in car accidents. Is it likely I've gotten my impression of them wrong all along, and that the people who looked great in their caskets didn't suffer lesser injuries, but had really good embalmers, and the people who look more visibly injured in their caskets weren't more injured, but didn't have embalmers who were as skilled?

I can't say your impressions of your photos are wrong without actually knowing the extent of the injuries of the deceased.

However, I'm pretty confident in saying that some of the pictures are "deceptive" of injuries because the artist was great and you can't tell there were actually any injuries at all. I'm also pretty confident that in some of the pictures the people with obvious disfigurements had a less skilled artist.

Some people just have some fucked up faces.

I'm just a nurse, but I would have to say gunshot wounds to the head, or any kind of moderate to massive head injury.

Well, to be fair, some people suffer from other internal injuries that kill them rather than head trauma. So, some of those pictures may be accurate as far as no obvious head trauma because they may have suffered injuries other than head trauma. They may have had a broken spine, ruptured organ(s), lacerations that caused them to bleed out, any number of other injuries you can't see outwardly while they lay dressed in a casket.

I don't want to give you the impression that everyone who is ever in a car accident has to suffer some type of head trauma, because that isn't accurate. I apologize if that is the impression I gave you. I was speaking only of people who had known head trauma.
