Maybe caused by icing on the wings like on Flight 4184?
Apparently there were warnings for severe icing in the area so probably yes

Clearly the pilots lost the ability to control altitude and pitch, in my uneducated, over documentary-ized opinion.

Even without engines, if they had hydraulics to control movable surfaces that affect pitch and yaw (like flaps, slats, elevator, rudder), I’m not sure it would have been in a flat spin like that.

Pilot reported complete power loss in engines... fuel starvation maybe?
Fuel starvation = no fire.

If you are in a flat spin the airflow isn't flowing over the control surfaces so they don't work properly (or at all). So a flat spin does not imply loss of hydraulics.
