I've seen pix from a similar incident where the victim was attacked by piranhas. It looked almost identical, with the head stripped clean of flesh, but the skin on the body looked almost flawless. However, the entire body cavity looked like it was "scooped out". There was nothing inside. Just bone covered by skin.

There are a few sets of pix like this on the web. All are from piranha attacks (or piranha scavenging).

Nothing else except a few species of fish do this to a body.
