The machines are built so you tell them what you want the output to be, and they design the cutting wheels and drive programs to give you that output. From 1/4" square up to 6" by 6" and anything in between.
Nothing stops or jams them. I have watched them chew up engine blocks with crankshafts still in them. They munched through the crankshafts like they were Fritos. Bowling balls. I-Beams. Railroad car springs. NOTHING withstands them.

If you go to the SSI website, they have hundreds of videos of every kind of product being shredded. They have entire engines going in and being chopped up, and the crankshaft didn't even slow them down. They just took huge bites out of the engine until there was nothing left. They use them to advertise their shredders, and show all the ways they can accommodate ANY item that needs to be shredded, from huge construction tires, to cement blocks, rebar to railroad wheels. They have a machine that will eat anything, and put it in a nice pile in the exact size you want, after processing. You can subscribe, and they send you the shred of the month, or you can just go to the website and watch any video you want to see. (I suggested they feed in a Cessna 150, if they could find one for cheap to scrap out.) They have one that has a VW bug being fed in nose first, and when it is done munching, the hopper is empty.

They disposed of old school bus seats in shredders and all that's left is green and pieces of foam. What a waste
