Most of the metal presses I have seen run continuously and are fed by coiled steel rolls. The operators monitor the process, remove stamped product and feed new coils of steel. So you typically wouldn't want to require the operator to keep pressing switches to run the press. I haven't seen big automotive or appliance panels being made, maybe they still load those one by one...
I watched those type of heavy duty presses shown in a Jam Handy film from that era in the ephemeral section of archive org, I noticed they had good safety protocols that early in manufacturing processes at Ford, Chevrolet and others, now in present day manufacturing I would expect safety measures to be a tad better, but we all know how the Chinese love to cut corners... and even sides.

I worked in a stamping plant for a short period of time, didn't take long to figure out that work wasn't for me. Speaking only from that one, short experience, it was actually very safe. Any stamping machine could only be activated by pressing a switch with both hands. The lathes were a bit more dangerous but you really had to have your head up your ass to get hurt. I get this a foreign company, so who knows.

I used to work at a small print shop, I remember the cutting machine there had the two button activation. It really is a foolproof way to make sure both hands are out of harm’s way.
when i make potential lethal toys in my shed, i always use 2 separate buttons to activate them. so i know one hand isn't near something dangerous, like a source of x-rays, or 10s of kV.
