They figure it relieves them of their karma/guilt for slowly torturing the animal to death if they give it a 'chance' to take a few of them out, and, it's supposed to make the bull look like a wild, vicious animal, again, to distract from the fact that the humans are the vicious animals.

The bull run happens b4 the fight; They get the animal all wound up so that it is ready to go once the bullfight starts- The way the bulls come charging out into the arena?.....That's because they are already pissed off at that point. Notice the tradition of matador, as well as many participants in the bull run wearing red.....Bulls are in actuality color-blind; it's just some cunt in tights waving the thing in the bull's face after a bunch of other cunts had him chase their drunk asses all around town that's got him pissed off.

.....the run guides the bull into the holding pen, where they hold it for a few seconds; when they finally open the gate, the bull is ready to explode.
