I think that, once the Cyanide started working, he suddenly wanted to live; after all, our greatest primary instinct is to survive, and seeing his reaction, once the cyanide started to kick in, well, that primary instinct kicked in also. What reaction? That noise was him struggling to breathe, people who take cyanide die from asphyxiation after all.
