Iphones that can't be opened are sold for parts. Most end up in China. There are videos on youtube about this.

If they snatch it while the victim is using it couldn't they just factory reset it while they are running away? I mean they probably do this a lot anyway lol

The United States has technical requirements on cellphones that pretty much makes snatching them almost useless. That is not the case in phones sold in South American countries and other parts of the world.
