They usually try to cut in the back so they can paralyze them but that didn't work cuz towards when he was towards in you can see them looks like he was twisting the head so the knife will cut through the Vera bring easier spinal cord then once you do that you can just slice right through it and pull the head off and they hold it up like a trophy
