Jury nullificatiin in a case like this would require such a large portion of the population to be completely unhinged that our entire justice system wouldve fallen apart long before th need for a jury pool

That’s generally untrue. You can use as much force as is necessary to decisively end the threat. Once she was in fear of serious harm she was fine to go straight to lethal force. You don’t have to ‘play fair’ when you’re defending yourself against risk of death or serious injury.
