I researched this today. Some medical professionals believe the human mind is still conscious for up to 40 seconds after the head has been removed from the body. They performed experiments on people who were going to be beheaded. They asked them to blink immediately after they were beheaded. And they blinked for up to 15-40 seconds before they were completely dead. This happened on more than several different occasions.

When heads get beheaded the brain is still funictioning for a short period of time. its still has oxygen in the vessels for it to even make movements. There was a french biologist that noted when a man was beheaded he still was able to to blink for almost a full minute.
