Sadly, I've seen a very similar pattern of injury in real life. As the collision occurs, an unrestrained body is thrown forward into, and if the crash has enough energy, through the windscreen/windshield. As the legs follow the upper body they come into contact with the dashboard it puts the body into a forward roll so she would have hit the barrier with the back of her head and across her back just below the level of the shoulders. Being as her neck was probably broken by the initial contact with the windscreen, it doesn't take as much force as you might think to separate the head and the arms. As the head is relatively heavy, and is lower down at the point of impact with the barrier it doesn't have the opportunity to escape over the edge of the bridge but bounces around on the road way a bit before rolling to a rest. The arms are lighter and a more aerodynamic shape so they travel the furthest, maybe with their direction of travel altered by the flailing legs as the body continues it's forward somersault. The body is heavy so it expends the energy imparted to it in the collision the quickest and falls on to the stairs. Part of the reason the body looks so large is that in the high temperatures even at night, body gases are going to start building up in the body cavities very quickly causing bloating. I also expect that as the head was separated from the body the connected internal organs will have been pulled upwards inside the body before the connecting tissues tore. In terms of the level of speed involved in the initial collision, I don't think it's all that high, from the level of damage to the car I would estimate certainly no more than 50mph (80km/h) and probably somewhat less...

It was not disclosed at what specific angle she impacted with the railing of the bridge, but she was in one piece at the top and no fewer than four pieces by the time she finished swan-diving to the pavement below. Eerily enough, her severed head remained atop the bridge, staring sightlessly into the Great Beyond from its position at the base of the railing. While going over the top (I cannot see the physics of her actually squeezing through or under and still being as intact as she was), both arms also came dislodged from their sockets and cascaded to the ground below, landing near one another but horrifyingly far away from her trunk and legs, which crashed down heavily upon the concrete steps leading up the bridge.

"Goes to pieces" is right. What a scene.
