Insects and such usually go after areas that are already traumitised before anything else, so if dude got his head bashed open by, say, a giant rock, then the corpse could be relatively fresh and still end up looking like that (the same exact thing happened to Elizabeth Pena's body - after just four days in the open skull, crotch and one arm were pretty well picked clean, but the rest of her was intact, and those were the areas with open wounds etc)
