In a lot of places there is less call for embalming. A lot of people don't like the environmental damage from the chemicals or feel they want their loved ones to return to the earth at a normal pace etc. It's also too pricey for some.
yes with what we know now, there is no reason to get a cadilac coffin and chemicals to prevent body from rotting. Let it rot...the beautiful cycle of life is intererruped by our vain attempts to chemically prevent it. "Ashes to ashes and dust to dust" is uttered at Christian funerals but it's meaningless if you're chemically preserved carcass is going inside a sealed varnished coffin
