So, it's very fresh. Given that the head is decapitated from the rest of the body, there's likely not much pain being experienced, especially since fish lack the same type of nociceptors as other classes of animals. When I was doing my stint as an abattoir veterinarian, I often saw tongues that had been cut out of cows licking and crawling around for up to 15 minutes after being removed. |

If I found something like that in a supermarket I'd buy it and rush home to cook it before the heart stops beating for absolute freshness. There is nothing like the experience of catching a fish, descaling, gutting then cooking it up right out of the ocean, lake or stream. Yums! |
