A guy name Denny Dent used to do performance art like this, rock star portraits in the time of one of their songs (Jim Morrison portrait in the time it took to play "Light My Fire")... he passed about 10 years ago...fun to watch

It's a trick. The painting is already complete, the white areas are then dusted with powder that matches the darker of the 2 colors. This is then wiped off giving the impression that white paint is being applied. To reinforce this idea, the 'artist' grabs a real brush at one point that really is dipped in white paint, and does swooshes across the painting. The rest of the time he is wiping off dust with a damp sponge or parts of his hand.
