The video was slowed down, so it looks like the cyclist had tons of time to react. The cyclist was actually descending at high speed and had just a fraction of a second to react. He saw the chicken and in response, he shifted his turn to a wider radius. Since he was in a high speed turn, braking would have sent him (and the chicken) into that rock wall. No win situation there.
