It would still have proteins and enzymes of all sorts, as well as tissue that is undetectable to the human eye. It also has marrow within the bones and exposed tooth pulp if any teeth are cracked. It takes a long time for death smell to dissipate, also.

Yeah, even animal bones stink, and that's when the meat has been taken off before going rotten, so can't imagine they would smell any better if the meat had rotted away on them.
