Because That lady was acting like a fucking cunt!!! She was being rude to the other contestants and she even spit on the guy that hits her. This is just the very end where at that point he had just about enough. If you watch the entire show then you would probably be glad that she was hit.

I re watched this again after first seeing it a few months ago. She hit him in the skull with her shoe with a loud *CLACK* as if made of the hardest bone (possibly unintentionally, though she was taunting him) and he wigged out and did what he did. He was rightfully ejected from the competition.
