Gotta stop the oxygen. As Ride said, put the lid on. Or, dump salt or baking soda on it. Turn the stove off and move the pan to a cool burner as soon as practical, at least it will burn itself out after a while.

NEVER put water onto a grease fire, it'll explode. I keep a CO2 extinguisher in my kitchen, they suck compared to standard ABC dry chemical extinguishers because the fire can instantly relight whereas ABC will continue to smother after you stop spraying. But, CO2 is nice because it won't trash your kitchen or food. Every kitchen, or at least every home, should have a fire extinguisher. Get you a 2.5-5lb ABC for your car and a 5lb ABC for your kitchen, and a 5-10lb CO2 for your kitchen if you don't want to clean up powder that'll get onto everything.
