I avoid it at all costs, but any time I’ve had to pull over I’m halfway in the ditch to leave plenty of room between my car and the drivers.

I think the driver was dazzled by the headlights of the oncoming car and never saw the vehicle in the shoulder. Not only were those headlights very bright, but they were not directed-beam lights - more like floodlights. The lack of regulation of vehicle headlights these days really, really sucks.
