They killed him first. If you'll notice the guy stabs him in the side into his heart which killed him instantly which is why he doesnt react when they cut his neck open.
I thought the guy punched the victim in the chin, hard enough to knock him out, or stun him so he would remain relatively still through the slicing of his neck.
