Guy must be relaxed. My heart rate would be much higher if that happened to me.
No it won't, once the heart is detached from the body it will be controlled only by the sinus node located in the right atrium and not the sympathetic nervous system.

How does a heart even get ejected like that? Its a muscle that is attached to a lot of fibres and arteries, and yet it comes out so cleanly?

I would have stood there and filmed the heart until it stopped. Then head over to the rest of the scene. To see if it stops gradually, or abruptly. A once in a gazillion opportunity lost.
