Sometimes they do it from the back to increase misery, and deliberately avoid the spinal cord, which would numb all pain further down in the body,and also at the same time avoid the carotid arteries, or the have the head upside down so the brain gets blood supply to keep the poor fella alive the longest as the life gets sucked out of him. One of the worst I can imagine is if they do those skinning videos, and avoid gouging the eyes out, or gouge out just one and have a mirror handy and force the fella to see his faceless self!
