Must have hit the heart while it was repolarizing. Doesn't matter how healthy you are, if you get hit in the chest while your heart is repolarizing, you will die.

An adult horse's kick can be as high as ~2000Pound/Square Inch. That's like dropping a car on your chest from two stories up essentially. I imagine this cow's kick wasn't far off from this, and instantly crushed his bones and stopped his heart from the sheer force alone. Boom, baby! |
