It's a trophy. Just like scalping and finger collecting. This happens a lot in war, especially when there are no superiors around. They take it for the same reason murderers take things from victims, to relive the moment/win. Wartime is very emotionally charged for those involved in killing, people do things which seem bizarre and unpalatable. But the emotions driving them are all about survival and winning. It's a completely different mindset to the average guy walking down the street. Some soldiers really struggle with aggression after leaving the army because they are effectively programmed to defend and attack without question.
