There are several reasons as to why he went out as fast as he did. Main things are that he is likely in fight or flight, and at least one of his arteries was likely lacerated.

1.) In slow motion, it seems like he gets stabbed more than once.

2.) His left pleural cavity is compromised, and can no longer sustain "negative," intrapleural pressure. His left lung will collapse. That will reduce oxygenation of hemoglobin = he will have a more difficult time maintaining the balance between oxygen supply and demand.

3.) He is hyped up.
a.) His heart rate is extremely elevated = he is going to bleed out far more quickly than if he was relaxed.
b.) Without a doubt he's in fight or flight. Increasing oxygen demand of his brain. Further exacerbating the oxygen supply and demand mismatch.

4.) Where the stab wound is, if he hit one of the anastomosed arteries he's going to bleed out twice as fast, as it will pour out blood from both directions. Additionally, he likely had at least one artery lacerated = He's going to bleed out a lot more quickly, than if it was just tissue or a vein.

I was in Tijuana last week. Visited a none tourist nice restaurant. The waiter was Colombian with a major attitude. Some Latinos are just too machos to use their brain an exit a potential harmful situation. I have seen this type of event in Latin America that it is almost "normal". If you rub a person the wrong way, they will not hesitate to harm you. Latin America is just not safe.
