Causes of death in such accidents are usually Acceleration/deceleration injuries, even if the head or vital internal organs may not be injured directly, the abrupt cessation of forward movement (i.e collision) these organs tend to continue moving, and then smash into the bony structures surrounding it (skull, chest bones) which causes severe blunt injuries and internal hemorrahges. The brain being most vulnerable , suffers internal bleeding and bruising, shuts down, and subsequently dies.
Avulsion injuries are also fatal (aorta, Lungs, heart, Liver) by means of massive internal bleeding and hemorrhagic shock.
even seat belt and air bags wont protect you on heads on collision at speeds over 80 mph. that can be easily acheived if both vehicles were driving at 40 mph in opposite directions (which is considered normal in-town speed ) ...its simple physics!

if 2 identical vehicles are travelling in opposite directions at 40mph and hit each other directly head on, the impact speed is 40mph

when each vehicle hits the other, because both forces are the same, both cars will bounce off each other equally and it is like hitting a solid object at 40mph. if one of the vehicles is heavier, then the lighter one will effectively receive the heavier impact. for instance a truck will run straight over the top of a small light weight vehicle
