My guess it's not a ear;
The "whitish meat" looks like broken vertebrae protruding the neck, the part that looks like a top of a "ear" is roundish portion of vertebrae trying to poke through the stretching skin.
The hole above the collar is not the ear hole, it's hole the broken vertebrae and gooey stuff came out of.
