It depends. Most will use the electric saw. Sometimes the handsaw is better, if a pathogen might be spread through bone dust for example.

Museum here has an exhibit recreating an old leg amputation. Same deal with the hand saw. Looks like there was something wrong with his foot with the way it's wrapped in gauze.
