I think the decapitation of his penis represents the life he had forced on her - a life of pain, shame, humiliation, fear, etc.

By decapitating his penis, she cut off the pain he caused her.

It is quite appropriate - I think it will work in her favor in the courts.

But then again, who am I kidding... generally, women in Muslim societies are lower than livestock in the courts...
