It's a specific type of crop. Ears are intentionally cut very close to head. This lack of ear prevents the opposing (fighting pits) from being able to grab more onto head. Cane Corso and Neopolitans are done the same way.

Dogs are a strange animal and we are every bit diverse. Dogs are so domesticated they can read you like a kid. Grow up violent with a dog you have a violent dog. To complicate this you have specified breeds. There is nothing like seeing a pit bull roll a hog on the ground. Nothing like watching a well trained German Shepherd run down a felon. Only heaven could touch bird dogs on point or a beagle on a trail. But its the human being that gives it its own unique personality.
