I assume it's because there is no muscle control in the eyes after death and they naturally roll back. If you watch some vids on here that shows people as they die, their bodies slowly relax because the brain no longer sends signals to the muscles to contract.

I'm not a doctor, but it makes sense to me that this is what is happening.
