I know very little about swords and the like, but I am fairly sure Southern Europe (plus France) had a much more robust organized stick fighting tradition than Northern and Western Europe (minus France). I say organized in the sense of operating as a combat sport. While the English and Germans taught quarterstaff combat in fencing school up through like the Thirty Years' War, their focus was more on a wide variety of practical applications like killing the French, maiming the French, crippling the French, blinding the French, and inviting Frenchmen over to eat oysters on your farm and barring the door from the outside and burning the French alive.
