Exactly. Start with a sharpened knife made of quality steel. NEVER attempt to cut through bone. Cut through skin to muscle at a place proximate to the appropriate ligaments (connective tissue that holds bone to bone at a joint). When you cut the appropriate connective tissues, (ligaments and tendons) the 'segments' are freed up. It's exactly the same as butchering a sheep, chicken, etc. |
