You can choke on scrambled eggs very easily. You can choke on a small fishbone. Ingesting food, or liquid into your airway can cause a gag reflex, where you can actually choke to death. The particle does not have to be larger than your trachea.

There are all sorts of reasons why someone might choke to death on something like scrambled eggs. It's not so much the food but rather the underlying problem. Dysphagia is the reason it happens, as others have mentioned, but the cause of the dysphagia can be many things. ALS is one example, strokes are another; there are many more.
