Actually, if one has the presence of mind in an emergency like this, the quickest way is to grab the throat to cut off air supply. When you have knocked the dog out, you have a chance to get away.

When you have a ballistic dog like that, the dog is so intense on what it's doing, that any kind of pain (beating it, breaking legs, etc.) doesn't faze it.

I have experience breaking up dog fights. Just my two cents.

Another thing that I just thought of is that if that dog was being trained to fight, then he didn't do a good job of it. A properly trained fighting dog is taught NOT TO BITE humans. This is because trainers are in and out of the fight arena even while a fight is underway, and also have to pull the dogs away when the round was ended. The only living creatures they are taught to be aggressive with are other dogs. So, theoretically you could throw a pit bull in the play pen with Junior.
