I have a philosophical question here, and I am not making fun of the poor man who had to jump. My question is I know that catholics deem suicide as a sin that sends you to hell. But what about this scenario, where it was be burned to death or jump? Is it still a mortal sin?

In this situation, it is not a sin. It is simply the avoidance of a painful death. He would be treated eccleastically as a victim of the accident.
