Rabbit is still sold as food in the U.S. it is expensive and considered a delicacy in restaurants. There is no difference in the breeds, only size. All can be kept as pets or eaten.

Horse meat never gets tough and would make a great food - but because the species has travelled at our side for so long(as have cats and dogs) they are taboo as a food source.

I see no problem in eating horse meat and I wouldn’t mind trying it.

It's a matter of the culture. Europeans, hungry or not, are not into horse meat, and it would hardly be practical to ship dead horses to far away places where they are considered edible.
Europe is one of the many places in the world where they DO eat horse meat. Horses in America that die are shipped to Europe to be prepared as food. Not all horses are sent over, of course, but the ones that are, are sent to Europe.

My Grandfather ate horse meat in France during WW1, I don't know if it was because it was WW1 or it was because it was France

I wonder if it’s just the ones that are also shipped to Mexico to be butchered. I don’t know if it’s legal for a private citizen to sell their horse meat - since it’s illegal to even possess it. I wonder what the loopholes are...

My dad ate it while at sea in the Coast Guard, in the 70’s. He said it was good and tender.

Actually there are plenty in Europe who'd eat horse or be none the wiser if horse meat was served up on their plate.
Horse meat is quite common in France. It's actually really tasty too, I prefer horse jerky to beef jerky, nicer flavour, more tender and not as fatty
