You can tell when black and whites are shot by pros from the lack of shadows. Many Times they put a tissue over the flash and or bounce to help to minimize.

One trick I haven't seen yet is the use of a red tinged filter. Makes blood look less dark and is used to show blood spray. Many times they used two flashes bouncing one off a white umbrella.

Ansel Adams is the king of black and white. A genius with the use of filters. Ever portrait B&W you see that shows extraordinary contrast is his.
