It's the second to last stage of decomposition, Black Putrefaction, your body starts to look like that due to rotting from the maggots and flys inside you, this guy must've been dead for a LONG time, or kept in Morgue or something, the next stage is that his skin will deteriorate off and he'll be nothing but bones and bonemeal.
