I'm not 100% sure but perhaps they can tell if / how long a person has been dead by the skins reaction to pressure.

If you apply pressure to your own skin & release it briefly appears lighter but almost immediately returns to it's natural colour.

I'd imagine a corpse with zero blood flow / pressure this would take substansially longer if the colour even returned at all.
